Magic Cake


Ingredients:
  • Egg : 4
  • Sugar : 150 g (¾ cup)
  • Butter melted : 125 g
  • All purpose flour : 115 g (¾ cup)
  • Milk (warm) : 2 cups (500 ml)
  • Powdered sugar for dusting
  • Vanilla : 2 Tsp


Preheat the oven to 325°F. Grease one 8 inch baking tin. Separate the eggs carefully and beat the egg whites until it turns stiff. Keep it aside. Then add egg yolks and sugar into a bowl and beat it. Pour melted butter and vanilla essence into it and beat it for another couple of mins. Slowly add the flour into it and combine it well. Add milk into this and mix. Finally add the beaten egg whites, a third at a time and fold them using a spatula. Repeat the process and combine all the ingredients well. Pour it into the prepared tin and bake it for 40 to 70 mins or until the top is lightly golden. Cool it and serve it with powdered sugar.

Dates Pancake


Ingredients:
  • Dates : 25 (deseeded)
  • Milk : ½ cup
  • Baking pdr : 1½ Tsp
  • Wheat flour : 1½ cup
  • Sugar : ¼ to ½ cup
  • Vanilla essence : ½ Tsp
  • Egg white of 1 egg
  • Salt : 1 pinch

Soak the chopped dates in ½ cup of warm milk for ½ hour and grind it well. Combine together wheat flour, baking powder, sugar and salt. Add the grounded dates and vanilla essence and mix it. Beat one egg white well and slowly add it into the batter. Then prepared the pancakes by pouring 1 big spoon full of batter into the pan and cook it in low flame.

Beef Roll


Ingredients:

For the outer cover :
  • All purpose flour (Maida) : 2 cup
  • Bread crumbs : as rqd
  • Water : as rqd
  • Salt : as rqd
  • Egg : 1

For the filling :
  • Beef : ¼ kg
  • Onion : 1 small
  • Ginger : 2 Tsp
  • Garlic : 2 Tsp
  • Pepper pdr : 1½ Tsp
  • Garam Masala : 1 Tsp
  • Salt

Mix the flour, salt, egg and required amount of water to make a fine batter. For preparing the cover, prepare thin dosas with this batter and keep them aside.

Cook the beef with salt and little pepper pdr. Mince it and keep aside. Heat oil in a pan and saute the chopped onion, ginger and garlic. Add salt, garam masala and rest of the pepper pdr into it. Add the minced meat and saute it for 5 mins. Remove it from fire. Then arrange 1 to 2 tablespoon of filling on the one side of the above prepared dosa and tightly roll it once then fold it from both sides towards the centre. Then, roll it fully and seal the end portion with maida batter. Dip it in beaten egg and roll it in bread crumbs. Fry it and serve it hot with sauce.

Caramel Pudding 2


Ingredients:
  • Milk : 1 ltr
  • Egg : 6
  • Condensed milk : 1 tin
  • Sugar : 2 + 4 Tbsp
  • Vanilla essence : 2 to 3 Tbsp


Mix the milk and condensed milk together and boil it till boiling point. Cool it to room temperature. Heat 2 tbsp of sugar in a pan in low flame. When it melts completely and turns into golden brown colour, remove it from fire and pour it into the pudding dish and spread it by tilting the dish. Then add the eggs, vanilla essence and rest of the sugar into the milk mixture and beat it well. Slowly pour it over the caramel. Cover it with an aluminium foil and steam it well in low flame. You can check if the pudding is properly cooked by poking it with a knife. When it comes out clean, switch off the flame and cool it well. Refrigerate it and cut it into desired shape.

Sanjeev Kapoor's Chicken Chettinad


Ingredients:
  • Chicken : 1 kg
  • Dry red chilly : 6 to 8
  • Grated coconut : ½ cup
  • Poppy seeds : 2 Tsp
  • Coriander seeds : 1 Tsp
  • Cumin seeds : ½ Tsp
  • Green cardamom : 3
  • Clove : 2
  • Cinnamon : 1 inch piece
  • Star anise : ½
  • Fennel seeds : 1 Tsp
  • Chopped ginger : 2 inch piece
  • Chopped garlic : 10 to 12
  • Oil : ½ cup
  • Onion chopped : 1
  • Curry leaves 
  • Chopped tomato : 3 med
  • Red chilly pdr : 1 Tsp
  • Turmeric pdr : ½ Tsp
  • Lemon juice : 1 
  • Coriander leaves
  • Salt

Clean and cut the chicken into medium pieces. Dry roast the ingredients from red chilly to fennel seeds in 2 table spoon of oil (fry the coconut till it turns golden in colour). Cool and grind it with ginger and garlic into a fine paste. Heat oil in a heavy bottom vessel and saute the onion till it turns to golden colour. Then add few curry leaves and above grounded paste into it and saute it for a few mins. Add the chopped tomatoes, chilly pdr, turmeric pdr and required amount of salt and roast it till it is void of its raw smell. Put the chicken pieces and combine it well with the masala and cook it for a few mins. Pour 2 cups of water and lemon juice into the chicken and cook it well. Garnish it with chopped coriander leaves and serve it hot with rice, roti, naan etc.

Semolina Cookies



Ingredients:

  • Melted butter : 200 g
  • Self raising flour : 200 g
  • Semolina : 200 g
  • Fine sugar : 100 g
  • Glazed cherries

Pre-heat the oven at 160° C. Beat the butter and sugar well. Add flour and semolina to the butter mixture. Combine it well and make it into small balls. Transfer it into the  tray and bake it for 15 to 20 mins. Then transfer it to a wire rack and cool it.
