Chocolate Devil Cup Cake


Ingredients:
  • Unsweetened cocoa pdr ¾ pdr
  • Unsalted butter 1½ cup
  • All purpose flour 3 cup
  • Coarse salt 1¼ Tsp
  • Van essence 1 Tbsp
  • Sour cream 1 cup
  • Hot water ¾ cup
  • Baking soda 1 Tsp
  • Baking pdr 1 Tsp
  • Sugar 2¾ cup
  • Eggs 4

Preheat the oven to 350°C. Whisk together cocoa and hot water till it becomes smooth and keep it aside. In another bowl combine flour, baking powder, baking soda and salt. Melt butter with sugar in a saucepan over medium heat. Remove it from heat and pour it into the mixing bowl. Beat with an electric beater till it's cool. Add egg one by one. Mix well after each addition. Then pour the cocoa mix and vanilla into this and combine well. Add flour in 2 batches into the above mixture, alternately with sour cream. Combine all the ingredients well. Transfer it into the cup and bake it for 20 mins. Cool it completely.

Mutta Cheera Thoran


Ingredients:
  • Egg 2
  • Onion 1
  • Red spinach 1 bunch
  • Turmeric pdr a pinch
  • Green chilly 2 to 5
  • Coconut 1 cup
  • Mustard seeds
  • Curry leaves
  • Water
  • Salt 
  • Oil
Clean and chop the spinach. Heat oil in a kadai and add mustard seeds. When it splutters, add curry leaves, coconut, chilly, chopped onion, pinch of turmeric pdr and salt. Saute it well and add chopped spinach. Combine and cook it. Reduce the heat and push the cooked spinach into the sides of the kadai and break the eggs into the centre, sprinkle a little salt and scramble it well. Then mix it with the cooked spinach and serve it hot.

Mango Crush Twist


Ingredients:
  • Mango Crush 50gm (about 3 to 4 Tbsp)
  • Lemon juice of ½ lemon
  • Chilled soda 1 glass
  • Ice cubes as rqd

Pour all the ingredients in a glass. Combine well and serve it with ice cubes. You can prepare similar ones with any type of fruit crush.

Mambazha Curry / Mangappazham Curry



Ingredients:
  • Ripe mango 5
  • Coconut 1 cup
  • Green chilly 2 to 4
  • Turmeric pdr ¼ Tsp
  • Cumin seeds ½ Tsp
  • Fenugreek seeds
  • Mustard seeds
  • Curry leaves
  • Dry chilly 2
  • Shallots 5
  • Water
  • Salt

Peel off the mango skin and cook it with sliced shallots, curry leaves, green chilly, salt and little water. Grind together coconut, chilly, shallots, cumin seeds and turmeric pdr into a fine paste. Pour it into the cooked mango and combine it well. Heat it for a few mins and remove it from fire. Season it with mustard seeds, fenugreek seeds, curry leaves and dry chilly.

Vettu Cake / Fried Cake. Kerala Special Chayakkada Palaharam.



Ingredients:
  • Egg 3
  • Maida ½ kg
  • Baking pdr ¼ Tspp
  • Powdered sugar 1 cup
  • Cardamom pdr ¼ Tsp
  • Water as rqd
  • Oil as rqd

Sieve the flour and baking pdr well. Combine powdered sugar and egg till the sugar completely melts. Make a well in the centre of the flour and pour the egg mixture. Mix it and make it into a dough using required amount of water. Cover and keep it aside for 15 to 30 mins. Then roll it and cut it into ½ inch square like pieces and make small cut on 4 sides and fry it .

Mango Ice Cream - 2




Ingredients
  • Chopped fresh mango (Alphonso)  2 cup 
  • Condensed milk 1 tin 
  • Fresh cream 1 cup
  • Sugar ¼ cup

Combine chopped mangoes and sugar well. Freeze it for 12 hrs. Remove it from freezer and puree it. Beat  the condensed milk well and add fresh cream, which was refrigerated for at least an hour, into it and beat it again till it turns creamy and soft. Slowly add the pureed mango into this mixture and combine. Transfer it into a pyrex dish or any other bowl and cover it with a plastic wrap. Again freeze it for 12 hrs.

Mango Lassi



Ingredients:
  • Chopped mango 1 cup
  • Chilled milk 1/4 cup
  • Curd 1/2 cup
  • Sugar 2 Tbsp
  • Cardamom pdr a pinch

Blend all the ingredients well in a blender till it turns creamy. Garnish with cardamom pdr and serve it chilled.

Lemon Cake


Ingredients:
  • Flour 2 cup
  • Butter 1 cup
  • Zest of one lemon
  • Fresh lemon juice ¼ cup
  • Granulated sugar 1 cup
  • Vanilla essence 1 Tsp
  • Baking pdr 2 Tsp
  • Salt ¼ Tsp
  • Eggs 4

Preheat the oven to 180°C. Grease one 9 inch cake tin and keep it aside. Beat butter and sugar till it turns creamy and fluffy. Pour the vanilla extract and mix it. Add egg one bye one into it and beat well after each addition. Sieve the dry ingredients twice and put the lemon zest into this. Add the flour and lemon juice alternatively and mix well. Pour it into the prepared pan and smooth the top with a spatula. Bake it for 40 to 50 mins. Transfer it onto a wire rack and cool it.

Garlic Dip - A perfect side for fried chicken



Ingredients:
  • Boiled and cooled potato 1 small
  • Egg white of 2 egg
  • Crushed garlic 5 to 10
  • Vegetable oil 1 cup
  • Vinegar 15 ml
  • Salt to taste

Mash the boiled potato and keep it aside. Grind all the ingredients, except oil, in a blender. Then slowly pour the oil drop by drop into the blender while it is blending. Beat it well till it reaches a creamy texture. Store in an clean air tight container and refrigerate it.
