Homemade Peanut Butter with Chocolate Chips


Ingredients:

  • Unsalted roasted peanuts : 425 gm
  • Chocolate chips : ½ cup
  • Salt : little

Grind the shelled peanuts with little salt until it is smooth and creamy. This process takes about 8 to 10 mins. Allow it to cool and add the chocolate chips and combine well.

Channa Biriyani


Ingredients:
  • Biriyani rice : 2 cup
  • Channa :  1 cup (soaked)
  • Ghee : 3 Tbsp
  • Cinnamon : 2 piece
  • Cloves : 5
  • Cardamom : 5
  • Onion : 2 big
  • Green chilly : 4
  • Tomato : 1 big
  • Chilly pdr : 1½ Tsp
  • Turmeric pdr : ½ Tsp
  • Garam masala : ½ Tsp
  • Coriander leaves : ½ Cup
  • Mint leaves : ½ Cup
  • Water
  • Salt
  • Oil

Heat ghee in a pressure cooker and saute cinnamon, cloves and cardamom followed by chopped onion and slitted green chillies. Then add chopped tomato and saute well. Put chilly powder, turmeric powder, garam masala, half of the mint leaves and coriander leaves into it and stir it for few mins. Add cleaned rice into the masala and fry it for 5 minutes. Finally add soaked channa, required amount of salt and 3 to 3½ cup of boiling water into it and mix all. Switch off the flame after 2 whistles. Keep it aside for 5 minutes. Then open the lid and add the rest of the coriander leaves and mint leaves.

Beef Pickle


Ingredients:
  • Beef : ¼ kg
  • Ginger paste : 2 Tsp
  • Garlic paste: 2 Tsp
  • Curry leaves : few
  • Spicy chilly pdr : 1 Tsp
  • Kashmiri chilly pdr : 1 Tbsp
  • Turmeric pdr : ½ Tsp + ¼ Tsp
  • Roasted fenugreek pdr : ½ Tsp
  • Mustard seeds : 1 Tsp
  • Sesame oil : as rqd
  • Vinegar : ¼ cup
  • Water : ½ cup
  • Salt : as rqd


Cut beef into medium sized pieces and cook it with salt, little chilly and turmeric pdr. Then fry it well. Boil together vinegar and water and keep it aside. Heat sesame oil in a kadai and add mustard seeds. When it splutters, add curry leaves and ginger-garlic paste. Saute till it is void of the raw smell. Reduce the flame and add the chilly powder and turmeric powder. Roast it well. When the oil starts to separate, pour the vinegar - water mix into it and boil. Add the fried beef and mix. Check the amount of salt and vinegar at this moment and add more if required. Sprinkle the roasted fenugreek powder over it and remove it from fire. Allow it to cool completely and store it in a clean air tight container.

Spicy Paneer Roast


Ingredients:
To marinate:
  • Chilly pdr : 1 Tsp
  • Pepper pdr :  ½ Tsp
  • Ginger paste : ¼ Tsp
  • Garlic paste : ¼ Tsp
  • Salt : 1 Tsp

For the gravy:
  • Paneer : ¼ kg
  • Onion : 1 big
  • Tomato : 1 big
  • Ginger paste : 1 Tsp
  • Garlic Paste : 1 Tsp
  • Turmeric pdr : ½ Tsp
  • Garama masala : 1 Tsp
  • Kashmiri chilly pdr : 1 Tbsp
  • Coriander leaves : ½ cup
  • Salt
  • Oil

Cut paneer into medium pieces and marinate with the pepper pdr, chilly pdr, ginger-garlic paste and salt for 1 to 2 hrs. Then, deep dry it and keep it aside.

Heat oil in a pan and saute the thinly sliced onion till it turns into golden colour. Add ginger garlic paste and stir till it is void of it's raw smell. Reduce the flame and mix the spices. When the oil starts to separate, put the chopped tomato into it and cook without adding water. Stir it occasionally. When it turns soft, add the fried paneer along with the coriander leaves and combine well. Sprinkle little water and cook it for five more minutes. Remove it from fire and serve it hot with naan, roti or rice.
