Corned Beef Masala


Ingredients:
  • Corned beef 1 can
  • Onion 1 big
  • Tomato 1 big
  • Ginger chopped 1 tbsp
  • Garlic chopped 1 tbsp
  • Chilly pdr 1 tsp
  • Pepper pdr a pinch
  • Corriander pdr 1 tsp
  • Turmeric pdr 1/4 tsp
  • Garam masala 1/2 tsp
  • Coconut milk 1/4 cup
  • Tomato sauce 1 tsp
  • Soy sauce 1 tsp
  • Curry leaves
  • Mustard
  • Salt
  • Oil
Heat oil in a pan and add mustard. When it splutters, add chopped onion, ginger, garlic and curry leaves. Saute till it turns brown. Reduce the heat and add chilly, turmeric, corriander and garam masala powder into it and roast it. Add the chopped tomato and cook it well. After that add the corned beef, salt, tomato sauce and soy sauce. Mix it well. Cook it and pour the coconut milk into it and stir it continuously in medium flame till it turns dry.

Thavala (Frog) Curry

Ingredients:
  • Frog legs 5 to 10 pieces
  • Onion 1 big
  • Tomato 1 big
  • Garlic 1 Tbsp( chopped)
  • Ginger 1 Tbsp(chopped)
  • Chilly pdr 2 Tsp
  • Pepper pdr 1/2 Tsp
  • Lime juice 1/2 Tsp
  • Turmeric Pdr 1/2 Tsp
  • Garam masala 1/2 Tsp
  • Mustard seed
  • Salt
  • Oil
Heat oil in a pan and add mustard seeds. When it splutters add chopped onion, ginger and garlic. Saute well. When it turns brown, reduce the heat and add chilly pdr, turmeric pdr and garam masala. Roast it well and add chopped tomato. Mix well and add the frog legs. Cover  and cook it in low heat. Do not add water.

Compared to other meats, it cooks fast. There is no distinguishing flavour for this and tastes similar to chicken.

Poori Masala

Ingredients:
For Poori:
  • Wheat flour 2 cup
  • Salt as rqd
  • Water as rqd
  • Oil as rqd
For potato masala:
  • Potato 2 big
  • Onion 1 big
  • Garlic 4 to 5 pods
  • Green chilly 4 to 5
  • Pepper pdr 1/2 tsp
  • Turmeric pdr 1/2 tsp
  • Garam masala 3/4 to 1 tsp
  • Curry leaves
  • Mustard
  • Water
  • Salt
  • Oil
Combine  together flour and salt. Add cold water into it and mix well. Make into a soft dough. Keep it aside for 1/2 hour. Make small size balls and roll it flat. Heat oil in a pan and fry it. 

Peel the skin of the potato and cook it well. Heat oil in a pan and add mustard. When it starts spluttering, add curry leaves, onion, garlic, chilly and salt. Stir it for 5 to 10 mins. Add pepper pdr, turmeric pdr and garam masala. Mix well and add potato and little amount of water. Mash the potato slightly. Cook it for another 5 mins and remove it from fire.

Thai Fried Fish

Ingredients:
  • Fleshy boneless fish 5 to 7 pieces
  • Pepper pdr 1/2 Tsp
  • Chilly sauce 1 Tbsp
  • Soy sauce 3 Tbsp
  • Cornflour 2Tbsp
  • Maida 1/2 cup
  • Egg 1 
  • Salt
  • Oil
Combine together all the ingredients except oil and fish. Marinate fish in this thick batter for 10 to 15 mins. Heat oil in a pan. Fry it well and serve it with dip sauce.

Dip Sauce:
  • Ginger chopped 1 Tsp
  • Garlic chopped 1 Tsp
  • Tomato Chopped 1/2
  • Soy sauce 1Tbsp
  • Sugar 1 Tsp
  • Salt
Mix together all the ingredients well.

Mushroom Cutlet

Ingredients:
  • Potato (cooked and mashed) 1 big
  • Mushroom (sliced) 2 cup
  • Cabbage 1/2 cup
  • Carrot 1/2 cup
  • Beans 1/2 cup
  • Ginger  1 Tbsp
  • Onion  1 big
  • Corriander leaves 3 to 4 Tsp
  • Garam Masala 1/2 Tsp
  • Green Chillies  1 Tbsp
  • Bread Crumbs 2 cup
  • Lime juice 1/4 Tsp
  • Pepper pdr 1 Tsp
  • Maida 1/2 cup
  • Water 
  • Salt
  • Oil 
Boil the potato and keep it aside. Saute all the chopped vegetables in oil, except mushroom and potato, by adding salt. After a few minutes, add the mushroom and fry it well.  Separately saute the onions and then add the cooked potato, ginger and chillies into it. Mix  the sauted mushroom mixture, garam masala, pepper pdr, salt, lime juice, corriander leaves and potato.  Make it into your desired shape.

Mix maida with required amount of water and make a thick batter. Then dip it in this batter and roll it in fresh bread crumbs and fry well.

Upma

Ingredients:

  • Rava (Sooji) 1 cup
  • Onion 1 med chopped
  • Green chilly 4 to 5
  • Black gram 2 Tsp
  • Coconut 2 Tbsp
  • Ginger 1 Tsp
  • Curry leaves
  • Water 1 cup
  • Mustard
  • Salt
  • Oil
Sieve and fry the rava well without over frying it. Keep it aside. Heat oil in a pan and add mustard seeds. When it starts spluttering, add black gram, chopped onion, ginger, chilly, salt and curry leaves. Saute well. When it turns golden brown, add water and allow it to boil. Add grated coconut and rava slowly into this and mix well. Reduce the heat. Cover it and cook for 5 to 10 minutes. Stir it well and serve hot.

Cabbage Curry

Ingredients:
  • Cabbage 2 to 3 cup chopped
  • Tomato 1 big chopped
  • Onion 1 big chopped
  • Garlic 2 to 3 pods
  • Curry leaves
  • Chilly 5 to 6
  • Meat masala 2 to 3 tsP
  • Garam masala 1/4 tsp
  • Coconut milk 1/2 to 3/4 cup
  • Mustard seeds
  • Vinegar 1 tsp
  • Water
  • Salt
  • Oil
Clean and cut the cabbage into medium pieces. Add chopped tomato, onion, garlic, chilly, curry leaves, little turmeric pdr, salt and water into cabbage and cook it well. Keep it aside. Add vinegar into masala pdr and make it into a paste. Heat oil in a pan and add mustard seeds. When it splutters, reduce the heat and add the paste. Roast it well and pour it into the cooked cabbage. Mix well. Add coconut milk into this and boil it in low flame for a few minutes.

Vanilla Muffin

Ingredients:
  • All Purpose Flour 4 cup
  • Granulated sugar 2 cup
  • Butter, melted 8 Tbsp
  • Baking pdr 1 Tbsp plus 2 Tsp
  • Vanilla  1 Tbsp
  • Milk 2 cup
  • Salt 1 Tsp
  • Egg 2 
In a large bowl, combine flour, sugar, baking powder and salt. In a small bowl, combine together milk, egg, melted butter and vanilla. Pour milk mixture into the dry ingredients; mix all ingredients thoroughly. Transfer it into a greased or paper lined muffin tins and bake at 400° F for 20 minutes.

Morum Vellam (Sambhaaram)


Ingredients:
  • Curd 2 cup
  • Water 1 to 2 cup
  • Shallots 2 to 3
  • Curry leaves 
  • Ginger small piece
  • Chilly 2 med
  • Salt as rqd
Transfer all ingredients into a blender and blend it well. Alternately you can first prepare a plain buttermilk and then crush all the ingredients and mix into it.
