Vanilla Spritz Cookies


Ingredients:
  • Flour : 2 cup
  • Butter : 1 cup
  • Granulated white sugar : ½ cup
  • Vanilla essence : 1½ Tsp
  • Egg yolk : 2 large
  • Salt : ¼ Tsp

Pre-heat oven to 180°C. Beat the sugar and butter till it turns fluffy, for 2 to 3 min. Then add egg yolks and vanilla essence into this and mix it with the butter mixture. Scrape down the sides of the bowl in between. Then add the flour and salt into this and mix it well.

Transfer the dough into a cookie press. Then press out the cookies into a greased baking tray, spacing about 2 inches. If the dough is too soft, chill it for a few minutes and use it again. Decorate the cookies with nuts, sprinkles or colored sugar. Bake it for 12 to 15 mins or until the edges of the cookies turn lightly brown. Remove it from oven and cool it completely. Then store it in an air tight container.

Semolina Cookies



Ingredients:

  • Melted butter : 200 g
  • Self raising flour : 200 g
  • Semolina : 200 g
  • Fine sugar : 100 g
  • Glazed cherries

Pre-heat the oven at 160° C. Beat the butter and sugar well. Add flour and semolina to the butter mixture. Combine it well and make it into small balls. Transfer it into the  tray and bake it for 15 to 20 mins. Then transfer it to a wire rack and cool it.

Walnut Butter Cookies


Ingredients:
  • Butter : ¾ cup
  • Cornflour : ½ cup
  • All purpose flour : 1 cup
  • Powdered sugar : ½ cup
  • Chopped walnut : ½ cup
  • Vanilla essence : ½ Tsp
  • Salt : a pinch

Mix the dry ingredients and keep aside. In a bowl, beat the butter and vanilla essence using a wooden spoon. Then slowly add the dry ingredients into it in 2 to 3 batches and combine well. Mix in the chopped walnuts. Make small balls out of these and transfer to a baking tray with parchment paper. Pre-heat the oven to 150° C and bake it for 20 to 25 mins. (I baked  at 180° C and it took 30 mins to me). Transfer it to a wire rack and cool it. Dust it with powdered sugar and serve.

Vanilla Chocolate Yo-Yo Biscuit



Ingredients:
For biscuit:
  • Vanilla flavoured custard pdr ¼ cup
  • All purpose flour 1 cup
  • Powdered sugar ¼ cup
  • Vanilla essence 1 Tsp
  • Butter 125 gm

For Cream:
  • Butter 25 gm
  • Powdered sugar ¼ cup
  • Vanilla custard pdr  ½ Tsp
  • Cocoa pdr 2 Tsp

Combine custard powder and all purpose flour in a bowl. Then mix the softened butter and powdered sugar using wooden spoon. Slowly, add the flour into the sugar and mix. Cover and chill it for 30 mins. Make small balls from the chilled dough and gently press the top of the balls with fork and dip in flour. Continue the process and arrange the cookies on a baking tray. Chill it again for couple of mins.
 Pre-heat the oven at 170°C. Bake it for 15 to 17 mins. Don't over bake the biscuits, it will lose the crispiness and texture of the cookies. Cool it well.
For the chocolate cream, mix all the ingredients until it turns creamy and smooth. Sandwich the cooled biscuit with cream. You can also have the biscuits without the cream. Store the cookies in an air tight container.

Flourless Chocolate Chip Cookies


Ingredients:
  • Cocoa pdr 2/3
  • Salt 1/8 Tsp
  • Powdered sugar 3 cup
  • Egg whites 2 to 4 (at room temp)
  • Chocolate chips 1½ cup
  • Vanilla essence 1 Tbsp

Preheat the oven to 350° F. Arrange two baking sheets with parchment paper and keep it aside. In a bowl, mix the dry ingredients except choc chips. Then add the vanilla essence into it. First add two egg whites into the above mixture and combine it. If the mixture appears dry, add the egg whites one by one until the batter is moistened. Beat well and add the chocolate chips. Drop each tablespoon full of batter into the baking tray. (Keep sufficient space between the batter). Bake it for 12 to 15 mins. Cool it and transfer it to an air tight container.

Super Peanut Butter Drops


Welcome all to a grand 2012....!! Let's start this wonderful year with a sweet cookie...!! 


Ingredients:
  • Semisweet chocolate pieces 1 cup
  • All purpose flour 1/2 cup
  • Granulated sugar 1/2 cup
  •  Brown sugar 1/2 cup
  • Peanut butter 1 cup
  • Baking soda 1 Tsp
  • Egg 2

Pre-heat the oven to 325° F. In a bowl beat peanut butter, granulated sugar, brown sugar and baking soda. Slowly add egg one by one and mix well. Put flour and mix well. Finally mix chocolate pieces into it. Shape dough into 1¼ inch balls. Place it on a ungreased cookie sheet and slightly flatten it with fingers. Bake it for 10 mins or till the side turns brown in colour.

Jam Cookies


Ingredients:
  • Egg 1
  • Butter  100 gm
  • Vanilla essence 1 Tsp
  • Powdered sugar ½ cup
  • Granulated sugar 2 to 3 Tbsp
  • Maida 1½  cup
  • Jam as required
Beat the powdered sugar and butter together. Add the egg into it and mix well. Pour the vanilla essence into the mixture. Slowly add maida into it and knead it into a soft dough. Refrigerate it in the lower rack for 15 mins. Make lemon size balls of it and coat it in granulated sugar. Place them in a baking tray and bake it for 6 mins at 180° C. Take the cookies out and press the top of the cookie with your thumb. Again bake it for 8 to 10 mins. Allow it to cool and fill the top of the cookie with jam.

Shortbread with a Citrus twist


Ingredients:
  • Maida 1 1/4 cup
  • Cold butter 1/4 cup
  • Lemon peel 1 Tbsp
  • Sugar 4 Tbsp
Preheat oven to 325 deg F. In a bowl, stir together flour, sugar and the lemon peels. Mix the cold butter with the flour and form a ball and knead until smooth. Shape the dough into 1 inch balls and place them on an ungreased cookie sheet. Flatten balls until they are 1/4 inch thick. Bake for 15 to 18 mins or just until bottoms start to become brown and centers are set. Transfer to a wire rack and let it cool.

Melting Moments Cookie... Happy X'mas to all....!!

Ingredients:
  • All purpose flour (maida) 1 1/2 cup
  • Powdered sugar 1/4 cup
  • Unsalted butter 1 cup
  • Cornflour 1/2 cup
  • Vanilla essence 1 Tsp
  • Salt 1/4 Tsp
In a bowl mix together all purpose flour, corn flour and salt. Keep it aside. In another bowl, cream the butter and sugar until it's light and fluffy. Add the vanilla extract and the flour mixture into the butter and combine well. Cover and refrigerate the dough for minimum 1 hour. Preheat the oven to 350 deg F. Line two baking sheets with parchment paper and keep it aside. When the dough is firm, form it into 1 inch balls and place it on the tray. Bake it for 12 to 15 min or until the edges starts to turn brown. Remove it from oven and cool it. When it cools completely, sprinkle powdered sugar on the top of the cookies.

Spiced Chocolate Tea Cakes

MERRY CHRISTMAS AND HAPPY NEW YEAR TO ALL.........

Ingredients:

  • All purpose flour 1 1/2 cup
  • Ground nutmeg 1/4Tsp
  • Baking pdr 1/4 Tsp
  • Cocoa pdr 1/4 cup
  • Egg yolk of 1 egg
  • Butter 1/2 cup
  • Sugar 3/4 cup
  • Milk 1/3 cup
  • Pwd sugar

Preheat oven at 350 deg F. In a small bowl, stir together flour, cocoa pdr, baking pdr and nutmeg. Keep it aside. In a large bowl beat butter at medium speed for 30 seconds. Add sugar and egg yolk into it and beat well. Add about half of the flour mixture and milk, mix it and add the rest of the remaining flour. Place dough in a decorating bag fitted with a large open star tip. Pipe it into desired shapes. Bake it for 10 to 12 mins or until firm and the bottom is light brown. Transfer to a wire rack and allow it to cool. Sift powdered sugar over the cooled cookies before serving.

Cut-Out Butter Cookies

Ingredients:

  • All purpose flour 3 cup
  • Confectioner's sugar 1 cup
  • Cold unsalted butter 1 cup
  • Vanilla extract 2 Tsp
  • Egg yolks of 4 eggs
  • Salt 1/2 Tsp

Mix together flour, sugar, cold butter and salt using hand or food processor. Lightly beat egg yolks and vanilla in a bowl and pour it into the flour mixture. Mix well until the dough forms. Divide dough into two, 1/2 inch disks. Wrap it well and chill it for 1 hour.

Preheat the oven to 350 deg F. On a floured surface, roll out the dough into a 3/16 inch disk. Cut the dough into desired shapes using cookie cutter. Transfer it into a baking tray and bake it for 15 to 20 mins. Allow it to cool on the rack itself and kept in an air tight container.

KFC Biscuit


Ingredients:
  • Flour 1 1/2 cup
  • Salt 1 1/2 Tsp
  • Sugar 1 Tbsp
  • Milk 2/3 cup
  • Baking pdr 1 Tbsp
  • Vegetable Shortening 1/3 cup
Preheat oven to 425 deg F. Sift together flour, salt, sugar and baking pdr. Make a well in the flour and add milk. Add shortening and knead it well. Add milk and mix it. Transfer it onto a floured board and gently knead 6 to 8 times. Roll out the dough into 1/2 inch thickness. Cut it with a round cutter and bake it for 10 to 13 mins.

Shortbread

Ingredients:

  • Unsalted Butter, at room temperature 1/2 cup
  • Caster Sugar 1/2 cup
  • All Purpose Flour 1 1/4 cup
  • Rice Flour 1/2 cup
  • Baking pdr 1/4Tsp
  • Salt 1/4 Tsp
Preheat the oven to 160 deg C/ 325 deg F. Grease a cake pan and keep it aside. Beat the sugar and butter together until light and fluffy. Sift over the flours, baking pdr and salt, and mix well. Press this mixture into the greased pan, smoothing the top with a spoon. Bake it for 40 to 45 minutes.

Butter Cookies

Ingredients:

  • Unsalted Butter (at room temperature) 1 cup
  • Icing sugar 1/2 to 3/4 cup
  • All Purpose Flour 1 3/4 cup
  • Vanilla 1 tbsp
Pre heat the oven to 275 degree F. Grease the baking sheet with butter and flour. Beat the butter and sugar well till it becomes smooth and creamy. Add vanilla into it. At low speed, gradually add the flour and mix well. Roll the dough into 1/2 inch thickness on a lightly floured surface. Cut with cookie cutters. Place it on a lightly greased baking tray or sheets.Bake it for 40 minutes.
