- Brinjal 1/4 kg
- Turmeric pdr 1/4 Tsp
- Vinegar 2 to 3 Tbsp
- Jaggery 2 Tbsp
- Ginger 1 big piece
- Garlic 5 pods
- Dry chilly 5
- Cinnamon 1 small piece
- Cardamom 3
- Peppercorn 4
- Clove 2
- Oil
Clean and cut the brinjal into small pieces. Heat oil in a pan and add ground ginger, garlic and dry chilly along with turmeric pdr and fry it for few mins. Add brinjal and cook it well. Add vinegar and jaggery into the brinjal and stir it till the oil starts separating. Sprinkle powdered spices into this and cool it. Transfer it to a bowl.

hey tina....thats a wonderful recipe....I rarely use aubergine in my recipe since my hubby hates it...damn..ur chutney looks so delicious...I will try this one....

Could u please tell me the name of vinegar that u used for this recipe?...And whats that common vinegar that we get in india?....I went to buy vinegar in here, there were literally hundreds of vinegar like malt vingera, wine vingera, cider vinegar, synthetic vinegar and many more....i bought one that was plain coloured and thebottle looked like the one we used to get in india...But i had a disaster with that vinegar. A whole bottle of beetroot pickle ended up in bin!The flavour was too strong even though i used very little than mentioned in the original recipe....Sorry for this essay ketto...
