Minced Chicken Fry


Ingredients:
  • Chicken 1/4 kg
  • Onion 2 big(chopped)
  • Garlic 8 to 10(crushed)
  • Dry chilly 8 to 10(crushed)
  • Curry leaves
  • Turmeric pdr 1/2 tsp
  • Salt
  • Oil
Clean and cut the chicken into medium piece. Cook it with turmeric, salt and pepper pdr till it turns soft. After cooling down, mince it well and keep it aside. Heat oil in a pan and add curry leaves, onion, garlic and salt. Mix well. When it turns dark brown, add turmeric pdr and dry chilly and saute it for another couple of minutes. Add minced chicken into it and saute well till it turns dry.

Chicken Spring Roll


Ingredients:
  • Chicken 1/2 kg
  • Onion 1/2 cup
  • Beans 1/2 cup
  • Cabbage 1/2 cup
  • Carrot 1/2 cup
  • Chicken masala 1 tsp
  • Pepper pdr 1/4 tsp
  • Soya sauce 1/4 tsp
  • Turmeric pdr 1/2 tsp
  • Spring roll sheet 2 to 4
  • Egg 1
  • Salt
  • Oil
Clean and cut the chicken into big pieces. Cook it with salt, turmeric pdr and pepper pdr. Mince it and keep it aside. Heat oil in a pan and add onion and chopped vegetables. Add salt and saute well. Add the minced chicken. Then add chicken masala and pepper pdr. Mix well and remove from heat.
Beat the egg and keep it aside. Place one spring roll sheet like a diamond with one point towards you. Place a few teaspoons of the filling in a log shape near the bottom of the sheet. Now roll the sheet from the bottom tip over the filling and slightly roll it so that it completely covers the filling. Then rub the three sides of the sheet with beaten egg so that it acts as an adhesive. Fold the left and right sides inside and finally roll the sheet up completely till the end. Lightly fry it in oil.

Egg Puffs


Ingredients:
  • Egg 2
  • Puffs pastry sheets 2 to 4
  • Onion 1 small or med
  • Ginger paste 1/4 tsp
  • Garlic paste 1/4 tsp
  • Egg masala 1/2 tsp
  • Pepper pdr 1/4 tsp
  • Salt
  • Oil

Boil the egg. After cooling down, remove the shell and keep it aside. Heat oil in a pan and add onion and salt. Saute well. When it turns light brown, add ginger-garlic paste and mix well. Add egg masala, garam masala and pepper pdr into this mixture. Keep it aside.
Take out the puff pastry from the refrigerator half an hour before you start preparing the puffs. Cut each egg vertically into two pieces. Spread the masala mix onto the puff pastry and place half an egg on top of it. Rub all the sides of the inner part of the pastry so that it acts as an adhesive. Fold the puff pastry over the egg and seal it. Preheat the oven to 400°F and bake it for 10 - 15 mins.

Banana Boat


Ingredients:
  • Ripe banana 1
  • Coconut 3 to 4 tsp
  • Sugar 2 to 3 tsp
  • Ghee 2 tsp

Steam the banana well till it turns soft. Peel the skin and split it. Fill it with coconut and sugar (do not mix the coconut and sugar). Add ghee to the top of this mixture. Serve it hot.

Paneer Mutter Masala


Ingredients:
  • Paneer 200 g
  • Green peas 1 cup
  • Cashew nuts 6 to 7 no
  • Onion 2 medium
  • Tomato 1 medium
  • Ginger paste 1/2 tsp
  • Garlic paste 1/2 tsp
  • Turmeric pdr 1/2 tsp
  • Chilly pdr 1 tsp
  • Corriander pdr 2 tsp
  • Fresh cream 1/4 cup
  • Cumin seeds 1/2 tsp
  • Water as rqrd
  • Salt
  • Oil
Cut paneer into small pieces and shallow fry it. Keep it aside. Heat oil in a pan and add cashewnuts, onion and turmeric pdr. Saute well. When it turns light brown, add tomatoes and ginger-garlic paste and cook well. Grind it into a fine paste. Heat oil in a pan and add cumin seeds and the grounded paste. Saute well and add chilly pdr, corriander pdr and salt. Stir it well for 5 minutes. Then add boiled peas and required amount of water into it and mix well. Cover the lid and cook it for another 5 minutes. Reduce the heat and add fresh cream and fried paneer into it. Mix well and cook it in low flame for 5 minutes.

Chocolate Chip Cheese Cake


Ingredients:
  • Chip or grated chocolate 1/2 cup
  • Sweet biscuit(any) 30
  • Condensed milk 1 tin
  • Fresh cream 3/4 cup
  • Gelatin 2 tsp
  • Butter 3 1/2 tbsp
  • Paneer 200gm
Powder the biscuit well. Melt the butter and remove from fire. Add the biscuit powder with melted butter and mix well. Transfer it into a cake bowl and keep it firmly pressed. Grind together paneer and condensed milk. Dissolve gelatin in 1/4 cup water for 15 minutes. Then double boil the gelatin. Mix together paneer mix, fresh cream, grated chocolate and gelatin well. Pour this mixture slowly over the biscuit mixture. Keep it in freezer for 30 to 45 minutes. Then transfer it into the lower level.

Biscuit Chocolate


Ingredients:
  • Marie biscuit 100g
  • Powdered sugar 100 g
  • Nuts(chopped) 100g
  • Butter 100 g
  • Cocoa pdr 2 tbs
  • Vanilla essence 1/2 tsp
Add butter into powdered sugar and mix well till it turns soft. Then add biscuit(powdered), nuts, cocoa pdr and vanilla essence into it and mix well. Transfer this mix into an aluminium foil and roll it well into a log shape. Keep it in freezer for 2 hrs. Cut into pieces.

Kadala Curry


Ingredients
  • Kadala 2 cup
  • Onion 1 big
  • Ginger 2 tsp chopped
  • Garlic 2 tsp chopped
  • Tomato 1 small
  • Coconut flakes 1/4 cup
  • Turmeric pdr 1/2 tsp
  • Chilly pdr 1 1/2 tsp
  • Corriander pdr 2 tsp
  • Curry leaves
  • Mustard seeds
  • Water
  • Salt
  • Oil
Soak the kadala in water over night. Clean and wash it and transfer it into a pressure cooker. Add the whole ingredients into it and mix well. Add sufficient amount of water and cook well until it turns soft. Cook it for 3 to 4 whistles. Heat oil in a pan and add mustard seeds. When it starts spluttering add onion and curry leaves and saute well. Add this mixture into the curry and mix well.

Maggi Chicken Cube Curry


Ingredients
  • Chicken 1 kg
  • Chicken cubes 3
  • Corriander pdr 2 tsp
  • Turmeric pdr 1/2 tsp
  • Chilly pdr 1 1/2 tsp
  • Ginger 2 tsp choped
  • Onion 2 big
  • Tomato 2 med
  • Coconut 1/2 cup
  • Water
  • Salt
  • Oil
Clean and cut the chicken into medium pieces. Grind together coconut and spices(3 pwdr). Heat oil in a pan and add onion and ginger. Saute well. When it turns light brown, add the tomato and cook it for few minutes. Pour the grounded mixture into it. When it starts boiling add the chicken pieces and maggi chicken cubes and mix well. Add required amount of water and cook well.

Chicken Roast


Ingredients:

For marinating

  • Garlic paste 1/4 tsp
  • Ginger paste 1/4 tsp
  • Vinegar 1 tsp
  • Turmeric pdr 1/4 tsp
  • Soya sauce 1/2 tsp
  • Salt

For curry

  • Chicken 1 kg
  • Onion 4 to 5 big
  • Tomato 3 med
  • Ginger Paste 3/4 tsp
  • Garlic paste 3/4 tsp
  • Cashew paste 1 tbsp
  • Raisins 1 tbsp grounded
  • Curry leaves
  • Chilly pdr 3 tsp
  • Corriander pdr 2 tsp
  • Turmeric pdr 1/4 tsp
  • Garam masala 1/2 tsp
  • Tomato sauce 1 tbsp
  • Water as rqrd
  • Salt
  • Oil

Clean and cut the chicken into medium pieces. Marinate it with all the ingredients and keep it refrigerated for 3 to 4 hrs. Heat oil in a kadai and shallow fry it. Keep it aside.

Heat oil in a kadai and add mustard seeds. When it starts spluttering add sliced onion, curry leaves and little salt. When it turns golden brown add ginger-garlic paste, cashew paste and grounded raisins. Mix well. Reduce the heat and add chilly, corriander, turmeric and garam masala. Roast it well and add chopped tomatoes, soya sauce and tomato sauce. Mix well. Add the fried chicken into the gravy and pour rqrd amount of water into it. Cook it well till it turns soft.

Malabar Chemmeen(Shrimp) Masala


Ingredients:
  • Chemmeen 1/2 kg
  • Onion 2 big
  • Tomato 2 small
  • Green Chilly 3 to 4
  • Ginger 1/2 tsp chopped
  • Garlic 1/2 tsp chopped
  • Chilly pdr 3 tsp
  • Turmeric pdr 1/2 tsp
  • Fenugreek pdr 1 pinch
  • Cumin pdr 1 pinch
  • Tamarind paste 2 tsp
  • Coconut milk 1/2 cup thick
  • Water
  • Salt
  • Oil
Clean and wash the shrimp. Heat oil in a kadai and add onions, tomato, garlic, ginger and green chilly and saute well. When it turns light brown, reduce the heat and add chilly pdr and turmeric pdr and saute well. Add the shrimp into it. Mix rqd amount of water and tamarind paste and stir it well. Cook it in medium flame. Once it is well done, lower the flame and add the coconut milk and mix well. Remove from heat and add small amount of cumin pdr and fenugreek pdr.

Mulaku Chammanthi (Red Chilly Chutney)


Ingredients:

  • Onion 1 small (finelly sliced)
  • Chilly pdr 1 to 11/4 tsp
  • Turmeric pdr 1/4 tsp
  • Vinegar 2 tsp
  • Curry leaves
  • Hot water 2 tsp
  • Mustard seeds
  • Salt
  • Oil

Heat oil in a pan and add mustard seeds. Let it splutter. Add curry leaves,onion and salt. Saute well. When it turns golden brown remove from heat and add chilly pdr and turmeric pdr. Mix well and add vinegar and hot water into it.

Pavakka Varuthathu(Bittergourd Fry)


Ingredients:
  • Bittergourd 1 big
  • Onion 1 medium ( sliced)
  • Garlic 2 to 3 pods( chopped)
  • Green Chilly 2 to 3
  • Turmeric pdr 1/4 tsp
  • Coconut Flakes 1/4 cup
  • Curry Leaves
  • Water
  • Salt
  • Oil

Clean and remove the seeds from the bittergourd. Then cut it into thin pieces. Add onion, chilly, coconut flakes, garlic, curry leaves, little turmeric pdr, salt and little water to the bittergourd and cook it for 5 to 10 mins. Allow the water to dry off by heating in low flame and with the lid open. Deep fry it in oil.

Soya Ulathu


Ingredients:
  • Soya 2 cup (cooked)
  • Onion 2 big
  • Ginger paste 1/2 tsp
  • Garlic paste 1/2 tsp
  • Corriander pdr 2 tsp
  • Turmeric pdr 1/2 tsp
  • Chilly pdr 2 tsp
  • Pepper pdr 1/2 tsp
  • Garam masala 1/2 tsp
  • Tomato sauce 1 tbsp
  • Curry leaves
  • Mustard
  • Salt
  • Oil
Boil water with salt. Cook soya in this water for 10 minutes. Squeeze out the excess water from the soya and cut it into small pieces. Keep it aside. Heat oil in a pan and add mustard seeds. Add onion and salt and saute well. When it turns brown reduce the heat and add ginger-garlic paste and saute for a couple of minutes. Add all the powders into it and roast well in low flame. Add tomato sauce. Mix well and add the cooked soya into the onion. Fry it well in medium flame.

Tuna (Tin Fish) Curry




Ingredients:
  • Tuna 2 tin
  • Onion 2 big
  • Garlic 3 to 4 pods (chopped)
  • Ginger 2 tsp (chopped)
  • Tomato 1 big
  • Corriander pdr 1 tsp
  • Turmeric pdr 1/2 tsp
  • Chilly pdr 2 tsp
  • Vinegar 2 tsp
  • Curry leaves
  • Mustard seeds
  • Water
  • Salt
  • Oil
Drain off the water or the oil from tuna (tin fish) and keep it aside. Heat oil in a kadai and add mustard seeds. When it splutters add curry leaves, onion, ginger and curry leaves and saute well. When it turns light brown reduce the heat and add the powders into it. Mix well and add the tomato. Cook well and add the required amount of water and 2 tsp of vinegar. Allow it to boil. Add tuna into this gravy and mix well.

Mutta(Egg) Curry

Ingredients:

  • Egg 2
  • Onion 2 big
  • Garlic pods 3 to 4
  • Turmeric pdr 1/4 tsp
  • Corriander pdr 2 tsp
  • Green Chilly 3 to 4
  • Garam masala 1/4 tsp
  • Eastern Egg Masala 1/2 tsp
  • Thick coconut milk 1 cup
  • Water 3/4 to 1 cup
  • Vinegar 1/2 tsp
  • Mustard seeds
  • Curry leaves
  • Salt
  • Oil

Boil the eggs. Remove the shell and keep it aside. Heat oil in a pan and add mustard seeds. When it starts spluttering add onion, garlic, green chilly and curry leaves. Saute it for 5 to 10 minutes. Add all the powders into the onion and saute it in low flame. Add water and vinegar. Mix well and allow it to boil. Reduce the heat and add coconut milk and mix well. Split the eggs and add it into the gravy.
